Chicken & Stuffing on Johnston Mooney and O’Brien Nutty Doorsteps. A real lunchtime favourite, guaranteed to satisfy any appetite.
Instructions How to Make It
- In a large pot, add the chicken breast and stock powder and cover with boiling water.
- Once the broth is boiling, reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the chicken is cooked through and no longer pink in the middle.
- Remove the chicken from the pot and let it cool slightly.
- Using a whisk or two forks, shred the chicken into small pieces.
- While that’s simmering prepare the stuffing.
- In a separate pot, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
- Add the herbs and salt, and pepper to the skillet and cook for another 1-2 minutes, until fragrant.
- Blitz the breadcrumbs and add to the pot and combine with the onion mixture.
- Add the chicken stock and stir until everything is well combined and moistened.
- Cook for another 2-3 minutes, remove the from the heat and let the stuffing mix cool.
- When both the chicken and stuffing have cooled, add them to a large mixing bowl with 2-3 tbsp of mayonnaise, and mix to combine.
- Take your delicious nutty doorstep slice add a layer of butter then a generous layer of the chicken & stuffing mix, and another layer of bread on top.
- Enjoy with a side salad for the perfect filling lunch.
Ingredients
- 3 chicken breasts
- 1 tsp stock powder
- 2-3 tbsp of mayonnaise
- Stuffing:
- 4 slices of bread (our Goodness of Both range works great)
- 2 tbs butter
- 1/2 onion, finely chopped
- 1 teaspoon dried sage
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tbsp chicken stock
