Beetroot Bomb Sandwich

This open sandwich is sure to excite vegetarians with its unique flavour & texture combination. It combines beetroot, cashew nuts, goats cheese and spinach all on our delicious Sourdough Lunch roll  to create a mouth watering taste!

Instructions How to Make It

  • Spread goats cheese on on side of the Sandwich Thin. Cover with beetroot and chopped cashew nuts.
  • Add spinach leaves and top with the other half of the lunch roll

Ingredients

  • 1 Johnston Mooney and O’Brien Sourdough lunch rolls
  • 50g beetroot, chopped into cubes
  • 40g goats cheese
  • 15g cashew nuts, chopped
  • Small handful of spinach leaves
