This open sandwich is sure to excite vegetarians with its unique flavour & texture combination. It combines beetroot, cashew nuts, goats cheese and spinach all on our delicious Sourdough Lunch roll to create a mouth watering taste!

Instructions How to Make It
- Spread goats cheese on on side of the Sandwich Thin. Cover with beetroot and chopped cashew nuts.
- Add spinach leaves and top with the other half of the lunch roll

- 50g beetroot, chopped into cubes
- 40g goats cheese
- 15g cashew nuts, chopped
- Small handful of spinach leaves
